Food environments fuel global obesity crisis

Public health experts warn that the modern food environment-dominated by ultra-processed foods (UPFs)-actively promotes weight gain, with over half the world's adults projected to be obese by 2050 unless urgent action is taken.

The obesogenic trap of ultra-processed foods

Supermarkets stock shelves with highly processed, calorie-dense products designed to be irresistible. Research links UPF-heavy diets to rising obesity rates, with studies showing these foods are engineered to override natural satiety cues, making them difficult to resist.

Franco Sassi, a public health researcher at Imperial College London, argues that consumer choices are largely dictated by surroundings. "The environment determines what you choose, even if you believe you're in control," he said. Marketing tactics, product placement, and affordability further skew decisions toward unhealthy options.

Labelling and policy shifts drive change

Front-of-pack nutrition labels have proven effective in altering purchasing behavior. Chile's 2016 mandate requiring black warning labels on high-sugar, high-salt, or high-calorie products led to a 23.8% drop in sales of such items. Similar systems, like Europe's Nutri-Score-a color-coded grading system from A (healthiest) to E (least healthy)-have gained traction, with 1,500 brands adopting it voluntarily.

Mathilde Touvier, co-creator of Nutri-Score and director of research at France's National Institute for Health and Medical Research, noted that the label emerged from studies linking poor nutrition to adverse health outcomes, including cancer. "Public pressure forced manufacturers to reformulate products, reducing sugar and replacing refined grains with whole grains," she said.

Behavioral interventions show promise

A pilot study by University College London researchers found that personalized coaching-including meal planning, cooking guidance, and education on healthier shopping-reduced participants' UPF intake by 25% over six months. Participants also reported weight loss, lower BMI, and improved well-being.

"We need to improve the environment and equip people with skills. Telling someone to 'cook a meal' is useless if they lack a kitchen or basic tools,"

While the study lacked a control group, its findings align with broader evidence that targeted support can shift habits. However, such interventions remain costly and inaccessible to many, particularly as healthier foods often carry higher price tags.

Systemic solutions required

Experts emphasize that no single policy or behavioral change will reverse obesity trends. Sassi stressed the need for a multi-pronged approach: "The food environment is complex. We need coordinated action-labelling, marketing restrictions, affordability measures, and education-to create lasting change."

A 2025 Lancet study warned that without immediate intervention, global obesity rates will continue to climb. The authors urged governments and industries to prioritize public health over profit, noting that small reductions in UPF consumption could yield significant benefits.

The path forward

As awareness grows, so does pressure on policymakers and food companies to act. Touvier and Sassi agree that empowering consumers with clear information and practical tools-while reshaping the food landscape-is critical to curbing the obesity epidemic.
